The Women of Dining Services Cookbook: Princess’ Chicken Fettuccini Alfredo
This chicken fettuccini alfredo is a great recipe on its own or with vegetables. Sauté vegetables in olive oil and then mix in with sauce and chicken.
Ingredients
2 pks shredded parmesan cheese
2 lbs chicken breast
1 lb fettuccini pasta
3 garlic cloves, minced
3 1/2 cups heavy cream
1/4 cup parsley
1 tsp salt and pepper
3 tbsp olive oil
1 stick of butter
Instructions
Cook the pasta in 4 quarts of water and 1 tbsp salt. Follow instructions on box then drain, set aside.
Slice the chicken into strips and season with salt and pepper. In a large skillet, heat 1 tbsp olive oil over medium heat. Sauté chicken until it’s cooked through. Remove chicken and set aside.
In the same pan over medium heat, sauté garlic in 1 tbsp olive oil and stick of butter. Sauté for 1 minute.
Add heavy cream and simmer for 10 minutes over medium heat. Add parmesan cheese and melt it. Then stir in the chicken. Combine and from heat.
Add the pasta to large bowl. Stir in the alfredo sauce and chicken. Top with chopped parsley. Enjoy!
