The Women of Dining Services Cookbook: Jasmine’s Apple Pie Casserole

Jasmine (Jazzy) loves baking, especially this apple pie casserole. It’s got the deliciousness of apple pie without the fuss of a traditional pie crust, plus it’s great for a crowd.

Ingredients

  • 6 sliced apples (gala, fuji or honey crisp)
  • 1 cup light brown sugar
  • 2 cups graham crackers (crushed)
  • 2 sticks butter (melted) plus 2 tbsp (melted)
  • 1/2 cup crushed pecans
  • 1/2 cup granulated sugar
  • Pinch of salt
  • Squeeze of 1 lemon

 

Instructions

  1. Pre-heat oven to 350 degrees.

  2. Mix the graham crackers and 2 sticks of melted butter to combine. Pour into 9×13 glass pan and press into bottom. Set aside.

  3. Peel and slice 6 apples. Mix with granulated sugar and lemon juice. Layer over the graham crackers.

  4. In separate bowl, mix the remaining butter, pecans, brown sugar and salt together and crumble over the apples.

  5. Bake for 45 minutes until bubbly.

  6. Cool completely and then slice into squares.

  7. Top with vanilla ice cream or your favorite flavor!
