The Women of Dining Services Cookbook: Shanin’s Kale Greens
This kale greens recipe can be used with any leafy greens, like collard greens. For extra flavor, add a ham bone.
Ingredients
1/2 lb. kale trimmed and rinsed
1 tbsp garlic (minced)
3 tbsp diced onions
1 small bag shredded carrots
2 tbsp brown sugar
1/2 cup apple cider vinegar
2 tsp hot sauce
3 cups chicken stock
Salt and pepper to taste
Instructions
In a quart pot, simmer half of the chicken broth, minced garlic, onions, brown sugar, half the apple cider vinegar and carrots. Let simmer for 3 minutes.
Add kale and the remaining chicken stock and apple cider vinegar. Simmer for 1 hour or as long as you like. The kale greens should melt in your mouth.
