The Women of Dining Services Cookbook: Mone’s Lemon Chicken
This savory lemon chicken dish is delicious when cooked as instructed or try using this recipe over jasmine rice with fresh vegetables for more great taste! Another great and healthy idea is to use chicken stock as a low fat alternative to baking with butter.
4 boneless chicken breasts
1/2 cup chicken broth
3 tbsp cilantro
3 garlic cloves, minced
1 tsp garlic powder
1 tsp onion powder
Juice of 1 lemon
1 lemon cut into pinwheels (4 slices)
Mix chicken stock, cilantro, garlic, garlic powder and onion powder together to combine into a marinade.
Place marinade in bag and add chicken breasts. Place in the refrigerator to marinate for one hour.
Preheat the oven to 350 degrees.
Empty the bag into oven safe baking dish.
Bake in the oven for 40 minutes or until chicken reaches 165 degrees. Then, remove from the oven.
Squeeze the juice of 1 lemon over top of the chicken.
Plate and top with juices from the pan and add one lemon pinwheel on top.
